RAID is a standard but RAID controller manufacturers don't write the
metadata on the disks the same way.
Also, not all conrollers support the same features.  You can setup a CMD
controller for 128,64,32,16 and 8kb blocks, while Chaparral only
supports 64,32, and 16.
RAID sets are standard, 0 is always striping, 1 is always mirroring,
etc.. but that doesn't make the drives written to by one controller
accessible by another manufacturers controller.

No, RAID is a handy standard.  As such, any RAID controller
should be able to read the drive, as long as it can read the RAID
level the data was written in.  (I believe.)

If you use RAID 1, then you can just pull the disk and pop it in
anywhere.  :)
