tails uses tor so your ip is never yours. it also changes the mac address. the options are all on there in the gui. i burned a disk first then booted my computer with that and installed onto the usb stick. i didn't set up luks, but that is documented; for full usb encryption. persistence seems to work well. am messing with securityonion right now. seems fun and well documented.
