We just purchase a Fonality system (too lazy to build an asterisk 
solution myself.)  They're using CentOS with a Sangoma T1/Pri card and 
Rhino channel banks.  They discouraged the use of more than one 
interface card and suggested the channel bank for our FXS ports. (We're 
using a T1 interface for our external connection.)

You might want to consider trixbox (www.trixbox.org) instead of rolling 
your own asterisk server.
