Try replacing the label reference in the /etc/fstab file with the
appropriate raw special block device.

Or if /Label is actually a mount point, use a second mount point.

Post the /etc/fstab you are trying to use to boot with.

If only /etc is missing the raid should be fine other than missing
/etc.
