I'd second that vote for Courier - I set up qmail/vpopmail/courier a few 
weeks ago for the first time, and it was a cinch...courier also has 
support for [IMAP|POP3] over SSL if you're interested.  I haven't used 
BincIMAP, so I can't say if it has support for SSL.
