Well assuming you're not running a DHCP server, you'll need to setup
some sort of network. TCP/IP on a private subnet, easy to do.If you
haven't setup a TCP/IP network before, it shouldn't be hard to find a
guide from a google search.

Once you have a network going, there are many ways you can extract
your data off the laptop. You could setup samba and copy files that
way, setup ftp and bring files over that way, install ssh and use
WinSCP to copy files, or you can setup a share on the windows machine,
mount it under linux, and copy things over that way...
