Linux: Debian stable, CentOS, or Slackware
Unixy: FreeBSD or NetBSD
Just works: FreeNAS
My personal favorite: OpenBSD

Of course you didn't specify skillset  and desired protocols.  Are you
sharing with Windows?  Linux?  Old world UNIX?  Commodore 64?
