I have also gone through the stage of wanting to diminish Windows from daily use. However, some Windows applications make school alot easier.

As an Ipod owner, I have not had alot of time looking for ways to support it through Linux. When I did look for alternatives there were non at the time. 

If you dont want to loose what you have on there now, you might want to consider a dual booting with Windows.

There have been times that I totally blow Windows and just run off an ld Gentoo installation on my laptop. When they were times I needed to run *programs* I emerged  Wine and was able to continue using them with no problem. 

Correct me if I am wrong, I thought that wine was made specifically for users who wanted to run World of Warcraft under Linux.

Af far as tranfering all your files from your Ipod you should have no problem (as long as you can boot from USB) I have used my Ipod to install Mac OS X on my HP but yes you can access it under Linux as well.
