This is wdiff does, almost to a "T" with what you want.  It uses
bracketd "+" and "-" characters to denote change.

#!/bin/sh
# Test wdiff

# set up files
echo foo bar > foo.1
echo foo foo bar > foo.2

# Now test insertion
wdiff foo.1 foo.2 > foo.1-2
# You should see:
# foo {+foo+} bar

# Now test removal
wdiff foo.2 foo.1 > foo.2-1
# You should see:
# foo [-foo-] bar
#EOF
