I know of a couple of resources, though I haven't looked into
them too much.

Debian Jr. which is a sub-project within Debain aimed at kids:
http://www.debian.org/devel/debian-jr/.

SEUL (Simple End User Linux)/edu is a more general project aimed
at education.
