I know that this is a kind of perverted thing to want to do, but is
there any way to mount a remote filesystem through ssh?

I have to move something local, that I access through NFS and
automounting, and I'd love to just change the automounting so that it
works through ssh...

I suppose the right answer would be to somehow vpn, instead, but that
would require more influence over the machine in its new location than
I have.  But that machine already offers itself up to ssh access...
