i don't believe that OE can use extra headers.  iirc there was a
thread on this in visi.help some time ago.  you can let your users
override this behaviour on an individual basis with either procmail or
by having them tweak the rewrite_subject && subject_tag variables in their
~/.spamassassin/user_prefs.
