With Redhat, it was easy to go the other way (sendmail to postfix).  Just
uninstall the sendmail rpm and install the postfix one.  I'd imagine going the
other way with Mandrake would be about as easy.

I've never actually configured sendmail, so I can't give you a comparison, but
postfix was a piece of cake to install.
