you can just execute the 'make' command under the rpm..
for example (From courier-imap.spec):
%prep
%setup -q
%configure --localstatedir=%{_localstatedir} \
--with-authdaemonvar=%{authdaemondir}
%build
(cd tcpd; touch INSTALL NEWS README COPYING AUTHORS ChangeLog)
make
make check
%install
you could easily pass the params you want after the 'make' there.
